Red Lantern is known for supporting and encouraging our team to have their own side hustles while working with us. Why? Because it keeps life interesting. It keeps them in spirit and inspired. The Entrepreneurial heart and mind is what fuels us.

Our Head Chef Toby gets to elevate her creativity at Red Lantern while her massage parlour businesses work for her.

She is often heard organising staff for her other businesses on her breaks at Red Lantern.

Toby’s organisational skills shine at Red Lantern. Organising the kitchen team is an essential skill for any Head Chef to possess.

Chef Mark gets to bounce menu ideas off Toby; and then she, in collaboration with the rest of the team, transform those ideas into dishes on the plate.

Toby found her love of food when she came to Australia in 1998. She had never known how to cook before that. The stars aligned however, on her arrival to Australia. Her cousin owned a restaurant in Newtown and invited Toby to try her hand at cooking. He took her under his wing and the rest is history.

Fun Facts about Toby:

In Thailand she was a model and an actress. She also played guitar and sang in a band.

Toby has been with Red Lantern for 6 years.

Her Favourite dish is Aunty’s Rice Cakes.
